Trying something new

... and this time i made fried pickles! it was on wednesday night after my roommate Sammy had a rough week with a big project due at school ... so i pulled up my pinterest and pickles are Sammy's favorite ... and mmmm-mmmm they sure were good!

but it was so yummy that i wanted to share with all of you!

and HERE is the recipe :

Makes 6 servings.

Ingredients

• 1 jar pickle slices (we like large, thick slices of Claussen dill pickles)
• 2 eggs
• 1/3 cup flour
• 1 Tbsp Worcestershire sauce
• 1 tsp hot sauce
• 1 tsp garlic powder
• 1 tsp Cajun seasoning
• 1 tsp pepper
• 1 1/2 cups panko bread crumbs
• Ranch dressing + hot sauce for dipping

Directions

1. Turn oven broiler on high.
2. In a medium bowl, whisk together eggs and flour. Add Worcestershire sauce, hot sauce, garlic powder, Cajun seasoning, and pepper. Mix well.
3. Place panko bread crumbs in a shallow dish. Dunk each pickle slice into the egg mixture, than dredge it in the panko bread crumbs.
4. Place coated pickles on a rack set above a baking sheet and sprayed with non-stick cooking spray. Place pan in the middle rack of the oven. Broil for about 3 minutes on each side.
5. Serve with Ranch dressing and a dash of hot sauce.

Spring Cleaning

So I finally got motivated today. After a little shopping for some new spring wardrobe items, I finally went through my closet. Since I've been going to pilates every other day for awhile my clothes are not exactly fitting like they use too. Due to adding muscle and losing fat, some are tighter and some have a little room. So my mom and I took matters into our own hands and finally found some adorable shorts and jeans that fit!

Ahhh there is nothing better than being comfortable and confident in your own clothes. After an hour of sorting and two large garbage bags later, I am ready for the switch and ditch party.

My friend Gill and I are having a fantastic party with some girlfriends this April. We are all getting together with some fabulous food, drinks and 5-10 gently used items that we want to give away, don't fit, etc. We plan on shopping within our friends clothes and whatever doesn't get taken will be donated to charity. Needless to say I have plenty of options and can't wait to see what I might be able to trade for, I will let you know how things go. For now I am off to do laundry and get ready for Monday.

***Hopefully next weekend Sam and I can tackle the next BIG challenge and take on the SPRING CLEAN!! We will see.....

It's official

I have beat both of the men in my life. In fact I've beat all three of them now (I almost forgot I have a brother in law). As usual my dad started his March Madness tournament. In order to join, it's easy you just need to pick your teams (pretty mindless). It has a fun few weeks with trash talking going on between all family members. The little little cousins started off strong but as the weeks went on people started to drop off... Luke, Ali, Becky, Dad, etc. after Kansas and Kentucky's big wins yesterday I am guaranteed cash in both of my pools (Work/Dad's). I told Lucy if Kansas won I would buy her a new tennis ball, so we're dreaming big here!

Off to a fun little day of eating, shopping and hanging out with my momzie, Happy Sunday!!

Bringing it back old school....

I ran across a few fantastic memories from the 90's on a pinterest website tonight. Then I went through the top 200 toys/trends from the 90's. I was bursting out in laughter after looking over them and found myself wanting to share my memories with everyone. So here they are some of my fan favorite items.....

It's only Monday

You know it's a bad sign when you walk to the door of your last clients house (6 pm). Chatting away with the mom..... Blah blah blah.... Grab your purse and slip on your shoes and BAM! ***see below picture***. Good news: both cute options. Bad news: it's only Monday!!!
